5 budget-friendly dinners for your weekly meal prep

Hey, Reader,

If you're planning your meals and grocery list for the week like I am, you might be on the hunt for some easy dinners that also won't break the bank.

Groceries are more expensive than ever and staying under budget is not easy. To help, I've been relying on my favorite meals made with beans and lentils to cut costs as much as possible. Beans and Lentils are some of the world's cheapest proteins that are also high in nutrition and fiber.

Here are my top five $1 dinners that I make over and over again:

I made this one last night and served over brown rice with homemade coleslaw made with Brussels sprouts.

I made this shepherd's pie as the main, plant-based dish to share at Easter this past week. My meat loving family members raved over it and helped themselves to seconds and thirds!

Serve with a side of your favorite Mexican rice and coleslaw or an array of roasted veggies for a complete dish!

My husband isn't a big fan of curry, but he LOVES this one. I pretty much always have a serving or two stashed in the freezer for last minute meals.

This crockpot dinner can be prepped in under 10 minutes and is crazy delicious! No one will miss the beef!
