Hey, Reader,

When life gets busy, it can be easy to let meal planning and making dinner go. But going into busy season with a bunch of reliable, go-to dinners in your back pocket makes life feel a whole lot easier.

Over the next few weeks, these 7 easy dinners will be making an appearance on our meal plan. They're all made in the crockpot (I am SO much more likely to get dinner on the table if I start 80% of it in the morning), use budget-friendly ingredients, and make for delicious leftovers.

Use these recipe ideas to sail right through the month and into summer!

This ramen is both ridiculously good and ridiculously easy. The broth slow cooks all day, then toss in the ramen noodles when there's 30 minutes left and boom. Homemade ramen!

Soy curls make an amazing vegan steak substitute and hold up exceptionally well in the crockpot. Simply rehydrate the soy curls, add them to the slow cooker with the simple marinade, and slow cook all day until ultra tender. We love this recipe as tacos the first night, then turn the leftovers into these beautiful vegan torta sandwiches for lunch the next day! *chefs kiss*

This recipe is easy to make vegan, vegetarian, or with meat! It’s a brothy soup filled with cheesy tortellini, sausage, Italian herbs, creamy coconut milk, and tons of freshly chopped kale! Brown the sausage and onions, then let the slow cooker work its magic.

These lentil sloppy joe's make an appearance on our dinner menu almost weekly. They're the epitome of an easy dump-and-cook crockpot recipe and can be served so many ways! Toasted burger buns, open face sandwich, sloppy joe "burger" bowls, and more. It's also makes the best freezer meal!

This enchilada casserole is the perfect way to recipe when you want to prep a hearty dinner in the morning. It's quick, easy, and slow cooks in layers of beans, beef, corn tortillas, enchilada sauce, cheese, and more.

These Hawaiian "Chicken" Tacos are made with spiced tempeh, juicy pineapple and a creamy slaw all stuffed in a charred corn tortilla. YUM.
